🍇 The ‘Kismis’ (Raisin) Process Explained

While Indonesian coffee is historically famous for heavy, earthy “Giling Basah” (wet-hulling) methods, Shasika Kismis Singaraja undergoes a hyper-modern, tightly monitored Anaerobic Natural technique.
Why is it named “Kismis”?
In Bahasa Indonesia, Kismis means raisin. The name is derived directly from the transformation the coffee cherries undergo during processing.
    1. Sealed Anaerobic Fermentation: Hand-picked, micro-sorted, hyper-ripe cherries are locked inside oxygen-deprived stainless steel tanks. The native yeasts break down fruit sugars under heavy pressure in this anaerobic environment.
    2. The “Raisin” Stage: When the cherries are released from the tanks to begin sun-drying on raised African beds, they have shriveled, turned deeply dark, and become incredibly syrupy—looking identical to a fresh harvest of raisins.
