While global Coffea liberica typically grows on sweltering, sea-level coastal plains, our single-origin lots benefit from the extreme microclimates of the Semendo mountain range, climbing up to 1,650 MASL. This exceptional altitude subjects the crop to sharp temperature drops at night, slowing down the cherry ripening cycle and locking in massive amounts of natural sucrose.
The trees are famous for their giant leaves and large teardrop-shaped cherries, which can grow to double the size of standard Arabica fruit. Grown organically inside mineral-dense volcanic soils under heavy shade canopies alongside wild local fruit trees, the root systems naturally absorb regional compounds. This adds an astonishing level of botanical and sweet aromatic complexity long before harvest.

☀️ The Traditional Natural Process (Dry Method)

To honor and fully draw out the deep fruit sugars trapped inside this thick-skinned cherry, the crop undergoes a patient, zero-water Natural Process:

  1. Selective Pick: Local farmers handpick only uniform, sugar-saturated deep red cherries at their peak sugar concentration.
  2. Whole Fruit Dehydration: The cherries skip the washing and peeling stages entirely. Instead, they are laid out whole across sun-drenched bamboo mats or open-air raised patios.
  3. Sugar Infusion: Over 21 to 30 days, the ambient sun slowly dehydrates the thick fruit wrapper. As the skin and sweet pulp shrink tightly around the seed, the inner bean naturally reabsorbs the fruit sugars, minimizing bitterness while maximizing structural sweetness.
  4. Hulling: Once the fruit pods turn completely brittle and dark, the crop hits a perfectly stable 12% moisture level. The dry hulls are cracked away, revealing a beautiful, large green bean.

Because the bean undergoes its long drying phase nestled tightly inside its sweet fruit wrapper, it produces a highly transparent flavor profile completely unique to the Liberica species.
  • The Cupping Notes: It treats the palate to a remarkably thick, syrupy full body with exceptionally low acidity. The front profile explodes with highly distinct, sweet notes of ripe jackfruit, sweet banana, and candied orange.
  • The Unique Finish: As the cup opens up, a comforting base of decadent dark chocolate, creamy caramel, and toasted cashews emerges seamlessly. It finishes with an alluring, aromatic floral scent that leaves a clean, satisfying, and sweet long aftertaste.
 

☕ Master Brewing Suggestion: The V60 Pour-Over

To celebrate the brilliant tropical fruit aromatics and clean, jackfruit-sweetness of Semendo Liberica, a manual paper-filtered pour-over method is highly recommended. The paper filter cleanly isolates heavy coffee sediment, showcasing the single origin’s unique complexity.

The Recipe for Perfection:

  • Ratio: 1:16 (e.g., 15 grams of coffee to 240 ml of water)
  • Grind Size: Medium (resembling sand)
  • Water Temperature: 94°C
  • Total Extraction Time: 2 minutes 30 seconds

Step-by-Step Guide:

  1. The Bloom: Set your grounds into the pre-rinsed V60 paper filter. Pour 30 ml of hot water evenly across the bed and let it bloom undisturbed for 45 seconds to allow trapped gases to fully vent.
  2. The Second Pour: From the 0:45 mark to 1:30, slowly pour in steady concentric circles until the total water weight hits 150 ml.
  3. The Final Drawdown: From 1:30 to 2:30, complete your final smooth pour up to the target 240 ml mark. Let the water drain completely, give your glass server a gentle swirl, and enjoy the magnificent tropical heritage of South Sumatra.
