While global Coffea liberica typically grows on sweltering, sea-level coastal plains, our single-origin lots benefit from the extreme microclimates of the Semendo mountain range, climbing up to 1,700 MASL. This exceptional altitude subjects the crop to sharp temperature drops at night, slowing down the cherry ripening cycle and locking in massive amounts of natural sucrose.
Liberica has historically been sidelined as a commercial filler bean due to uneven processing in lowland regions. However, Semendo farmers revolutionized the species by introducing strict high-altitude sorting and target engineering. By meeting rigorous physical sorting requirements and scoring outstanding marks on the international cupping table, this bean shattered conventions. The very high-quality Semendo Liberica became recognized globally when competitive baristas used natural anaerobic Indonesian Liberica to dominate international championship. Liberica from Semendo, South Sumatra, part of our collection, was selected and used by German competitor Urs Rotzinger at the 2026 World Brewers Cup in Brussels.

To honor and fully draw out the deep fruit sugars trapped inside this thick-skinned cherry, the crop undergoes a patient, hyper-controlled Anaerobic Natural process engineered by advanced micro-biologists:

  1. The Sealed Tank Lock: Farmers hand-pick uniform, sugar-saturated deep red cherries. Instead of exposing them to the elements, the fruit is placed entirely whole into specialized, airtight anaerobic tanks.
  2. 120-Hour Anoxic Fermentation: With all oxygen strictly blocked, anaerobic yeasts digest the fruit sugars over 120 hours. The thick skin of the Liberica cherry acts as a natural biological fermentation chamber, forcing intense tropical fruit flavors and sweet acids deep into the dense core of the seed.
  3. Slow Whole-Fruit Curing: The cherries are removed from the sealed tanks and spread across raised beds with their skins and fruit meat completely intact. The lot dries slowly under highland breezes for 3 to 4 weeks, allowing the bean to fully reabsorb the sweet mucilage compounds before final dry hulling.

Because the bean undergoes its long fermentation and drying cycles locked securely away from external oxygen, it minimizes chlorogenic bitterness while magnifying structural sweetness and full body texture.
  • The Cupping Notes: It treats the palate to a remarkably heavy, syrupy full body with balanced acidity. The front profile explodes with highly distinct, sweet notes of ripe jackfruit, exotic snake fruit, and wild berries.
  • The Unique Finish: As the cup opens up, a comforting base of creamy milk chocolate, sweet sugarcane, and caramelized brown sugar emerges seamlessly. It finishes with an alluring, aromatic herbal scent that leaves a clean, satisfying, and sweet long aftertaste.

☕ Master Brewing Suggestion: The V60 Pour-Over

To celebrate the brilliant tropical fruit aromatics and clean, jackfruit-sweetness of Semendo Liberica, a manual paper-filtered pour-over method is highly recommended. The paper filter cleanly isolates heavy coffee sediment, showcasing the single origin’s unique complexity.

The Recipe for Perfection:

  • Ratio: 1:16 (e.g., 15 grams of coffee to 240 ml of water)
  • Grind Size: Medium (resembling sand)
  • Water Temperature: 94°C
  • Total Extraction Time: 2 minutes 30 seconds 

Step-by-Step Guide:

  1. The Bloom: Set your grounds into the pre-rinsed V60 paper filter. Pour 30 ml of hot water evenly across the bed and let it bloom undisturbed for 45 seconds to allow trapped gases to fully vent.
  2. The Second Pour: From the 0:45 mark to 1:30, slowly pour in steady concentric circles until the total water weight hits 150 ml.
  3. The Final Drawdown: From 1:30 to 2:30, complete your final smooth pour up to the target 240 ml mark. Let the water drain completely, give your glass server a gentle swirl, and enjoy the magnificent tropical heritage of South Sumatra.
