☀️ The ‘Padmana Classic Natural’ Process

Sumatra is globally famous for Giling Basah (wet-hulling), a quick-to-market process born out of high local humidity. However, Padmana Ribang Gayo champions an incredibly strict, elevated Classic Natural Process, which means the coffee seeds are dried completely intact inside their original fruit skins. No water strips the pulp, and no machines wash away the precious mucilage before drying.
  1. Hyper-Selective Sorting: Farmers gather cherries at 99% optimum ripeness. They undergo manual flotation and rigorous hand-sorting to isolate peak sugar concentration.
  2. Extended Bed Drying: The intact cherries are spread onto raised African drying beds.
  3. Rigorous Aeration: To counteract Sumatra’s sudden mountain downpours, the cooperative team manually rakes and turns the cherries every single hour. This painstaking care gently coaxes the moisture down to a precise target of 11%–12% while completely eliminating defective wild fermentation.
 

🍵 Why does the coffee taste so special?

As the whole cherry sun-dries over several weeks, the inner seed acts like a sponge, drawing in the sweet enzymes, intense tropical fruit sugars, and aromatic esters trapped inside the surrounding pulp.
Instead of traditional earthy flavors, this process yields a remarkably clean, candy-like cup profile:
  • Explosive Tropical Fruits: A vibrant splash of ripe mango, sweet pineapple, and fresh lychee.
  • Vibrant Vinous Acidity: Layered, juicy notes of crisp red apple, sweet cherry, and orange citrus zest.
  • Elegant, Complex Finish: A rich, silky texture backed by deep sweetness reminiscent of brown sugar, honey, and high-grade black tea

☕ Roasting & Brewing Guidance

This microlot is carefully roasted at a Light-to-Medium (Filter) profile to preserve its delicate floral aromatics and fruit clarity.
To extract the complex structural matrix of this Cup of Excellence lineage, manual pour-over preparation is highly recommended: 
  • Brew Method: V60, Fellow Stagg X, or Kalita Wave.
  • Recipe: 15g of medium-coarse coffee to 240ml of water (1:16 ratio).
  • Water Temperature: Keep your water temperature around 92°C–96°C. A gentle, steady concentric pour without heavy physical agitation will yield the cleanest, sweetest expression of the fruit layers.
