🌱 The High-Altitude Terroir and Besemah Variant

True Pagar Alam coffee thrives in a unique microclimate surrounding the jagged, cloud-kissed peaks of the Mount Dempo volcanic complex. While global Robusta is typically relegated to hot lowlands, our premium crops are cultivated at rare alpine altitudes up to 1,450 MASL. This exceptional height yields crisp mountain nights that slow cherry ripening, forcing the trees to develop complex organic carbohydrates.
The smallholder crops are composed of the resilient Besemah variant, a local heritage strain known for its excellent branch architecture and massive bean density. Intercropped organically alongside native shade trees like cinnamon, petai, and clove bushes, the roots naturally absorb regional botanical compounds, lending the bean a deeply layered flavor dynamic long before harvest

☀️ The Traditional Natural Process (Dry Method)

To honor and lock in the maximal structural sweetness of the fruit, our coffee undergoes a meticulous, zero-water Natural Process:

  1. 100% Red Cherry Pick: Local farmers selectively pick only uniform, sugar-saturated deep red cherries at peak ripeness.
  2. Whole Fruit Drying: The cherries remain completely whole. They are laid out onto open-air raised sun-drying beds exposed to the highland wind.
  3. Slow Pulp Absorption: Over 14 to 21 days, the ambient tropical sun dehydrates the fruit. As the outer cherry skin and sweet mucilage shrink tightly around the seed, the inner bean naturally reabsorbs the fruit sugars, adding incredible sweetness and low-acid structural body.
  4. Precision Hulling: Once the outer shell turns completely brittle and dark, the crop hits a perfectly stable 11-13% moisture level. The dry hulls are cracked away to expose a clean, hard, and flawless robusta seed.

Because the bean undergoes its final dehydration phase nestled inside its sweet fruit wrapper, the harsh, rubbery bitterness typical of commercial low-grade robustas is completely stripped away.
  • The Cupping Notes: It features an exceptionally heavy, buttery, and full-bodied texture with zero acidity. The front palate greets you with an intense burst of decadent dark chocolate, creamy brown sugar, and toasted hazelnuts.
  • The Unique Finish: What captured the hearts of European judges in France is its balanced, lingering aftertaste. The volcanic soil structure infuses the cup with an elite sub-tone of warm baking spices and soft ginger, providing a deeply clean, highly comforting, and intensely powerful finish.

☕ Master Brewing Suggestion: Traditional ‘Tubruk’ or Pressurized Moka Pot

To fully unleash the heavy texture and profound cocoa sweetness of natural Pagar Alam Robusta, immersion-style or stove-pressurized extraction is highly recommended.

Option A: Kopi Tubruk (Traditional Indonesian Steeping) — For True Authenticity

This historic method allows the natural oils to bypass paper filters completely, intensifying the bold mouthfeel and rich dark chocolate sweetness.
    • Grind Size: Fine to Medium-Fine
    • Water Temperature: 94°C – 96°C (Hot, off-boil water)
    • Ratio: 1:12 (e.g., 15 grams of coffee to 180 ml of water)
    • Method: Put the coffee grounds directly into your favorite glass. Pour the hot water over them, stir thoroughly, and let it steep for 4 minutes. Allow the fine sediment to settle completely to the bottom before taking your first velvety sip.

Option B: Stovetop Moka Pot — For an Intense Espresso-Like Profile

  • Grind Size: Fine
  • Method: Fill the internal filter basket evenly without overly pressing the grounds. Brew over low, steady heat. This extraction pulls out a dense, syrupy hazelnut crema, making it the ultimate base for a rich, traditional Kopi Susu (iced milk coffee blend).
