  1. Stage 1 (Anaerobic Natural Fermentation): Plump, handpicked whole red cherries are sealed inside airtight stainless tanks for an astonishing 120 hours. Deprived of oxygen, internal yeasts force intense, candy-like tropical fruit properties deep into the bean’s core.
  2. Stage 2 (Anaerobic Honey Fermentation): The cherries are mechanically de-pulped, leaving the sugar-rich fruit mucilage intact. The sticky seeds are sealed back into airtight anaerobic tanks for an additional 120 hours. This second phase refines the organic acids, building an exceptionally layered sweet structure.
  3. Stage 3 (The Clean Wash Finish): The sugar-loaded beans are thoroughly scrubbed with pristine mountain water, washing away all remaining fruit residue to eliminate heavy ferment flavors and ensure absolute flavor clarity.

    • Ratio: 1:16 (e.g., 15 grams of coffee to 240 ml of water)
    • Grind Size: Medium (resembling fine sand)
    • Water Temperature: 90°C – 92°C (Slightly cooler water keeps the intense fruit character juicy and clean)
    • Total Extraction Time: 2:45 to 3:10 minutes
Step-by-Step Guide:
  1. The Bloom: Dampen your grounds with 40 ml of water. Let it bloom undisturbed for 30 seconds to release trapped carbon gases.
  2. The First Pour: Gently pour in steady circles up to 120 ml by the 0:30 mark.
  3. The Second Pour: At 1:15, pour smoothly up to 190 ml to draw out the bright nectarine and stone-fruit sweetness.
