Our single-origin lot is cultivated by dedicated smallholder farmers organized around award-winning local cooperatives and sustainable agriculture networks. Perched on ultra-fertile volcanic Andosol soil at elevations climbing up to 2,000 MASL, the coffee plants thrive under the cool, mist-cloaked microclimate of Mount Kerinci.
This lot purposefully isolates two of Indonesia’s elite Arabica strains: Andung Sari and Sigarar Utang. By focusing on these specific cultivars, the plants develop a beautifully clean genetic profile. Fed by rich volcanic minerals and shaded by native mountain trees, the cherries yield incredibly dense seeds packed with natural, complex sugars.

🍯 The Artisan Honey Process (Pulped Natural)

To emphasize the crisp fruit dynamics without losing the classic Sumatran weight, the cherries skip traditional wet-hulling (Giling Basah) entirely. Instead, they undergo an immaculate Honey Process, which leaves a specific layer of fruit sugar right on the bean during dehydration:

  1. Precision Pulping: Deep red cherries are sorted in water, and passed through de-pulpers that remove the tough outer skin but carefully leave the sticky, sugar-rich inner fruit mucilage (the “honey”) perfectly intact.
  2. Controlled Micro-Fermentation: The mucilage-coated beans ferment peacefully for up to 30 hours. This allows the ambient wild yeasts to slowly break down the fruit meat, pushing sweet, complex organic acids deep into the grain.
  3. Slow Raised-Bed Curing: The sticky parchment is spread across elevated sun beds. Dried patiently for 15 to 20 days under highland breezes, the golden honey layer fully caramelizes onto the seed. Once it hits a stable 12% moisture level, it is dry-hulled to reveal the polished green bean.

☕ Master Brewing Suggestion: The V60 Pour-Over or Moka Pot

Because Kerinci Honey balances high sweetness with great structural density, it is incredibly versatile across filter or pressurized extractions.

Option A: The V60 Pour-Over — For Maximum Sweetness & Fruit Clarity

Using a paper filter allows the clean peach and caramel layers to shine beautifully without being masked by heavy sediment.
  • Ratio: 1:15 (e.g., 15 grams of coffee to 225 ml of water)
  • Grind Size: Medium (resembling sand)
  • Water Temperature: 92°C – 94°C
  • Method: Add grounds to the filter. Pour 45 ml of water and let it bloom for 45 seconds to vent the rich, volcanic gases. Slowly pour the remaining 180 ml in two steady, continuous concentric circles. Complete the draw down by 2:45 minutes for an intensely sweet, juicy experience.

Option B: Pressurized Moka Pot — For a Thick Caramel Espresso-Style

  • Grind Size: Fine to Medium-Fine
  • Method: Fill the coffee basket evenly without tamping it too tightly. Brew over a low, steady flame. This extraction draws out a thick, hazelnut crema with an ultra-rich walnut and milk caramel texture that acts as a stunning base for a gourmet iced latte.
