True Genggelang coffee thrives within a highly unique mountainous microclimate lining the northern slopes of the Mount Rinjani volcanic complex. Our premium lots are cultivated in highland cooling zones reaching up to 700 MASL.
This elevated microclimate slows down the maturation of the coffee cherries. Growing slowly in deep, volcanic-rich soil alongside native forest shade trees allows the roots to absorb complex organic compounds. The farms are highly biodiverse ecosystems where coffee trees grow side-by-side with cacao, wild vanilla, and local fruit trees. This companion planting allows the root systems to absorb complex organic sweetness directly from the earth, smoothing out harsh chlorogenic bitterness long before harvest.

☀️ The Traditional Natural Process (Dry Method)

To capture and lock in the maximum structural sweetness of the fruit, the crop undergoes a patient, zero-water Natural Process:

  1. Selective Harvesting: Local farmers handpick only uniform, sugar-saturated deep red cherries at their peak sugar concentration.
  2. Whole Fruit Dehydration: The cherries skip the washing and peeling stages entirely. Instead, they are laid out whole across open-air raised sun beds exposed to mountain breezes.
  3. Sugar Infusion: Over 14 to 21 days, the ambient sun slowly dries out the fruit. As the outer cherry skin and sweet mucilage shrink tightly around the seed, the inner bean naturally reabsorbs the fruit sugars, minimizing bitterness while maximizing structural sweetness.
  4. Precision Hulling: Once the fruit pods turn completely brittle and dark, the crop hits a perfectly stable 12% moisture level. The dry hulls are cracked away, revealing a clean, hard, jade-colored green bean

Because the bean undergoes its long drying phase nestled tightly inside its sweet fruit wrapper, the traditional harsh or rubbery bitterness common in commercial alternatives is completely stripped away.

  • The Refined Finish: The high-altitude natural processing strips away any harsh astringency, leaving behind an incredibly long, smooth finish with underlying hints of creamy palm sugar and a soft, chocolate-malt sweetness that lingers comfortably.
 

☕ Master Brewing Suggestion: Traditional Tubruk or Moka Pot

To extract the thick texture, natural oils, and deep chocolate sweetness of natural Genggelang Robusta, immersion-style or stove-pressurized extraction is highly recommended.

Option A: Kopi Tubruk (Traditional Indonesian Steeping) — For True Authenticity

This historic method allows the natural oils to bypass paper traps entirely, intensifying the bold mouthfeel and rich dark chocolate sweetness.
  • Grind Size: Fine to Medium-Fine
  • Water Temperature: 94°C – 96°C (Hot, off-boil water)
  • Ratio: 1:12 (e.g., 15 grams of coffee to 180 ml of water)
  • Method: Put the coffee grounds directly into your favorite glass. Pour the hot water over them, stir thoroughly, and let it steep for 4 minutes. Allow the fine sediment to settle completely to the bottom before taking your first velvety, aromatic sip.

Option B: Stovetop Moka Pot — For an Intense Espresso-Like Profile

  • Grind Size: Fine
  • Method: Fill the internal filter basket evenly without overly pressing the grounds. Brew over low, steady heat. This extraction pulls out a dense, syrupy hazelnut crema, making it the ultimate base for a rich, traditional Kopi Susu (iced milk coffee blend).
