Cultivated in the misty, high-altitude volcanic highlands of Pangalengan, Bandung Regency, West Java (historically revered as the Sunda region), the coffee plants flourish in incredibly nutrient-dense volcanic soil. The severe temperature drops at night drastically stall cherry maturation, forcing the coffee seeds to pack intense sugar densities and clear organic acid matrixes before harvest.

🧪 The Science of ‘Anaerobic Lactic Natural’ Fermentation

The defining identity of Java Frinsa’s global acclaim is its signature, technologically advanced Anaerobic Lactic Natural process.
The process name points directly to the deliberate biochemical reactions engineered during the post-harvest period:
    1. Lactic Inoculation: After hand-picking the highest-brix, deep-crimson cherries, the estate washes them thoroughly to clear away ambient bacteria. They then introduce a precisely isolated starter culture of Lactobacillus probiotics straight into the whole cherries. This culture was selected because it mimics the positive microbial breakdown elements found within the digestive tract of a wild Luwak (civet cat)—but executes it in a pristine, laboratory-clean environment.
    2. Anaerobic Chambering: The inoculated cherries are loaded into specialized airtight tanks or thick plastic bags, completely starved of oxygen for roughly 2 to 3 days. In this anaerobic vacuum, the Lactobacillus bacteria thrive by consuming the sugars of the fruit mucilage, producing an extremely high concentration of lactic acid.
    3. The Natural Finish: The intact cherries are moved to raised African beds inside ventilated greenhouses, sun-drying slowly over 14 to 20 days with their sugary husks fully attached.

By excluding oxygen and guiding the fermentation with specific bacterial strains, the typical wild, harsh, or vinegary defect notes of unmonitored processing are completely avoided. The dense lactic acid compounds sink deep into the core of the seed, altering the physical structure of the liquid to yield a radically distinct cup profile:
    • Brilliant Fruit Clarity: A vibrant, juicy mouthfeel layered with tasting notes of crisp apple tea, red currant, fresh cherry, and sweet purple grapes.
    • Luxurious Lactic Creaminess: The structural signature of this coffee is an ultra-smooth texture reminiscent of raspberry yogurt, molten milk chocolate, and rich toffee.
    • Sophisticated, Complex Finish: A long, candy-like aftertaste beautifully supported by balancing undertones of sweet balsamic and warm winter spices.
 

☕ Roasting & Extraction Parameters

To protect the fragile, volatile fruit aromatics and the milk-chocolate sweetness, Java Frinsa Lactic Natural is roasted exclusively as a Filter Roast (Light to Medium).
To extract the clean, layered fruit attributes of this lot, manual pour-over preparation is highly recommended:
    • Brew Method: V60, Fellow Stagg X, Origami Dripper, or Chemex.
    • Recipe: 15g of medium-ground coffee to 240ml of water (1:16 ratio).
    • Water Temperature: Keep your water around 92°C–95°C. A gentle, steady concentric pour will let the clean fruit notes and creamy mouthfeel unfold in perfect equilibrium.
