    1. Hyper-Selective Picking: Farmers hand-gather only fully ripened, crimson cherries.
    2. First Stage Depulping: The cherries are pulped locally to remove their outer skin and left to ferment overnight in their mucilage.
    3. The Wet-Hull Stage (Giling Basah): The next morning, the sticky beans are washed clean and laid to dry under the sun for a tiny window until they hit 20%–24% moisture. While the beans are still exceptionally soft and moist, they are immediately put through a specialized hulling machine to strip away their outer protective parchment layer. This directly exposes the soft green beans to the crisp mountain air, initiating a final, meticulous sun-drying cycle on raised beds until they stabilize at a perfect 11%–12% export moisture target.
