🌱 Terroir and Ancestral Variants

Our coffee thrives in the highly fertile, mineral-dense volcanic soil surrounding Lake Laut Tawar and the Burni Telong mountain range. At microclimatic heights up to 1,700 MASL, cool mountain air and persistent cloud cover slow down cherry ripening. This slow maturation forces the plant to concentrate its organic sugars, generating exceptional flavor complexity.
The smallholder crops feature historical Indonesian variants like TimTim (a natural Arabica-Robusta hybrid from Timor) and Ateng Super. Grown organically under native shade trees, these structural variants preserve a robust genetic resilience that translates to immense depth in the brewed cup

💧 The Processing Art: Semi-Washed vs. Fully-Washed

What truly separates this single origin from standard global coffees is the signature Indonesian Semi-Washed technique, locally termed Giling Basah (Wet-Hulling). Born out of necessity to combat Sumatra’s humid, rainy climate, this method handles the bean’s protection completely differently than Western methods. The fundamental structural divergences between Semi-washed and Fully-washed Processing method are:
  • The Semi-Washed Process (Giling Basah):
    Farmers pick ripe red cherries, pulp them to remove the outer skin, and ferment them overnight. After a brief wash, the coffee is dried for just a few hours until the moisture drops to around 30-35%. Crucially, the protective outer parchment layer is stripped off while the bean is still soft and wet. The naked, deep bluish-green beans are then spread directly onto open-air patios to complete their drying process.
  • Fully-Washed Process:
    In the traditional Fully-Washed method, the coffee bean is never stripped naked while wet. It remains safely encased inside its hard protective parchment shell through the entire drying journey until its moisture drops completely to a stable 11-12%. Only then is the dry parchment hulled off.

✨ Why the Taste is Exceptionally Special

Because the Semi-Washed bean finishes its drying phase directly exposed to ambient air without its parchment shell, it absorbs the rich characteristics of the local environment. This alters the organic acids within the seed, subduing bright citrus notes and maximizing a heavy, velvet-like mouthfeel.
  • The Cupping Profile: Each cup delivers an opulent, syrupy full body layered with deep notes of almond, dark chocolate, rustic cedar, and palm sugar, beautifully balanced by complex sub-tones of fresh herbs and warm kitchen spices like nutmeg.
  • The Clean Finish: Unlike traditional washed coffees which can be sharp and brightly acidic, Aceh Gayo offers a smooth, comforting, and low-acid profile that satisfies casual drinkers and specialty coffee purists alike.
 

☕ Master Brewing Suggestion: The French Press

To extract the maximum flavor and honor the bold characteristics of Aceh Gayo, we highly recommend the French Press (Immersion) method. Because this method uses a metal mesh filter rather than paper, it allows the coffee’s natural, heavy essential oils to pass completely into your cup, emphasizing its legendary velvety body.

The Recipe for Perfection:

    • Ratio: 1:15 (e.g., 20 grams of coffee to 300 ml of water)
    • Grind Size: Coarse (resembling sea salt) to prevent over-extraction and sediment.
    • Water Temperature: 92°C – 94°C (off-boil water to prevent scorching the sugars).
    • Brew Time: Total of 4 minutes.

Step-by-Step Guide:

    1. The Bloom: Pour 60 ml of water over the grounds. Stir gently and let it bloom for 30 seconds to release trapped gases.
    2. The Infusion: Pour the remaining 240 ml of water evenly over the coffee.
    3. The Rest: Place the plunger lid on top (do not plunge yet) and let it steep for 3.5 minutes.
    4. The Plunge: Press the plunger down slowly with steady pressure. Pour immediately into your favorite mug and enjoy the rich, syrupy depth of Sumatra.
