Unlike Western fully-washed processing—where the protective inner parchment skin remains intact until the bean is bone-dry—the Toraja semi-washed method peels this outer shell off while the bean is still soft, wet, and highly absorbent (at ~30% moisture). Removing this barrier allows the bare green coffee seed to dry in direct contact with the crisp mountain air, a crucial chemical interaction that transforms its cellular makeup.

Option A: The Syphon (Vacuum Brew) — For Maximum Body & Theater

The immersion-and-vacuum nature of the Syphon beautifully accentuates the rich, syrupy essential oils of the semi-washed bean without letting it become muddy, emphasizing its rustic spice notes.

Option B: V60 Pour-Over — For Clarity & Nuance

If your batch is a high-altitude lot with delicate floral or citrus undertones, a manual V60 filter method will highlight its cleanliness.
    • Ratio: 1:15 (e.g., 16 grams of coffee to 240 ml of water)
    • Grind Size: Medium (resembling sand)
    • Water Temperature: 93°C – 95°C
    • Brewing Style: Slow, deliberate concentric pours. Give it a gentle bloom for 45 seconds to let the rich, earthy gases escape, then complete the total pour within 3 minutes.
