Our crops grow on smallholder estates winding around the active volcanic complexes of the Lesser Sunda Islands. While global Robusta is typically relegated to hot, lowland plains, Flores fine Robusta is cultivated at high altitudes up to 1,200 MASL.
This exceptional elevation introduces chilly alpine nights and a slow maturation cycle. When paired with nutrient-packed, black volcanic ash soil, the coffee trees generate far higher natural sucrose levels than ordinary Robusta. Intercropped alongside native cacao, vanilla, and sweet tropical fruits, the plants draw deep botanical complexity directly from the earth.

💧 The Precision of the Fully-Washed Process

To strip away harsh phenols and preserve the cleanest flavor profile possible, this fine single-origin goes through a strict Fully-Washed (Wet Method) processing format:
  1. Controlled Fermentation: The beans, still covered in sugar-rich mucilage, soak in clean fermentation tanks for 18 to 24 hours. Microbes safely break down the fruit sugars, unlocking vibrant chocolate and nutty precursors.
  2. The Pure Wash: The beans are rushed through washing channels with fresh mountain water to remove every single trace of remaining stickiness.
  3. Protected Drying: Unlike Indonesian semi-washed coffees—where the soft beans are dried completely naked to the elements—Fully-Washed coffee dries slowly inside its hard protective parchment shell. Spurted onto raised beds or clean cement patios, the bean cures slowly over 10–14 days until its moisture reaches a perfectly stable 11%. Only then is the dry parchment hulled off.

The Fully-Washed technique gives Flores Robusta an extraordinarily crisp, flawless clarity that is virtually unheard of in standard Robusta coffees.
  • The Cupping Profile: It treats the palate to a remarkably clean, heavy, and syrupy body. The cup is dominated by dominant notes of rich dark cocoa, roasted peanuts, and warm brown sugar, beautifully accented by subtle sub-tones of dry cereal, woodsmoke, and a soft, malted sweetness.
  • Zero Harshness: The meticulous fermentation and washing processes eliminate the harsh, muddy flavors common in low-grade commercial coffees, leaving behind a smooth, comforting finish with double the caffeine kick of an Arabica.

Because Flores Robusta boasts a thick cellular density and a naturally heavy oil content, it thrives under extraction methods that highlight concentration and body.

Option A: The Specialty Espresso — For Mind-Blowing Crema

Use this single-origin to pull a standalone espresso shot, or blend it into your favorite espresso profile. It yields a remarkably thick, persistent, hazelnut-colored crema and acts as an excellent base for lattes, cutting through milk with structural dark chocolate brilliance.

Option B: Traditional Phin (Vietnam Drip) — For Slow, Rich Infusion

    • Ratio: 1:10 (e.g., 20 grams of coffee to 200 ml of water)
    • Grind Size: Medium-Coarse (resembling coarse lake sand)
    • Water Temperature: 95°C
    • Brewing Method: Place the grounds inside the Phin gravity filter. Moisten the coffee with 30 ml of hot water and let it bloom for 1 minute. Press the internal filter plate down gently, pour the remaining 170 ml of water, and let it drip slowly. For a traditional Southeast Asian finish, brew it directly over a tablespoon of sweetened condensed milk.
