⛰️ The Anatomy of Origin

The Leuser Ecosystem is one of the most biodiverse rainforests on earth, providing a rare microclimate that fosters intense, slow-maturing coffee cherries.
  • Origin & Terroir: Harvested from the remote Pantan Cuaca Estate, Gayo Lues, Central Aceh, Sumatra. The coffee trees thrive underneath a natural rainforest canopy, enriching the volcanic soil with natural organic biomass.
  • Species: 100% Arabica (Coffea arabica).
  • Variants / Varietals: A premium heirloom blend of Abyssinia, P88, and Bourbon/Catimor.
  • Altitude: Cultivated at a staggering 1,400 to 1,800 meters above sea level (masl). This high altitude stretches out the cherry maturation process, packing the seeds with dense complex sugars and crisp malic acids.
 

🧪 The Anoxic Natural Process

The outstanding quality of Leuser Anoxic Natural comes from its highly technical Anoxic (Oxygen-Free) Natural processing method. Rather than letting coffees ferment randomly in open air, this technique relies on a strictly managed biochemical environment.
  • Creating the Anoxic Environment: After hand-picking only the most deeply red, sugar-dense cherries, the whole fruits are placed into heavy-duty fermentation bags. All oxygen is mechanically vacuumed out before sealing.
  • Cold-Controlled Intracellular Breakdown: The sealed bags are kept in a temperature-controlled space (stabilized between 12°C and 24°C). Because there is no ambient oxygen or external air exposure, standard spoilage bacteria cannot survive. Fermentation happens intracellularly inside the cherry, driven by its own native enzymes and anaerobic yeasts.
  • Pressurized Sugar Infusion: As the anaerobic metabolism progresses, carbon dioxide gas naturally releases inside the skin. This internal gas pressure builds up, effectively driving the sweet, fruit-forward juices of the sticky mucilage directly into the porous core of the coffee seed.
  • Sun-Dried Finishing: After achieving the target pH and fermentation window, the whole cherries are removed from the bags and laid across raised African beds to slowly solar-dry for up to 3 weeks.
