Produced by dedicated smallholder farmers in the volcanic Highlands of North Sumatra, this coffee honors the region’s traditional processing methods while achieving an ultra-clean, remarkably sweet dessert-like profile. ⛰️ The Anatomy of Origin

Grown in the shadows of active volcanic peaks, this coffee benefits from some of the most nutrient-rich soils and ideal microclimates in Southeast Asia.
  • Origin & Terroir: Cultivated in the fertile lands of Karo Regency, North Sumatra, Indonesia.
  • Species: 100% Arabica (Coffea arabica).
  • Variants / Varietals: Predominantly high-quality Catimor heirloom strains.
  • Altitude: Grown exceptionally high at 1,300 to 1,600 meters above sea level (masl). This high altitude slows down cherry growth, forcing the trees to develop highly dense seeds packed with natural sugars.
 

🔬 The Innovative ‘Wet-Hulled Vanilla’ Process

While traditional Sumatran wet-hulling (Giling Basah) often yields rustic, earthy, and herbal profiles, this micro-lot utilizes a strictly engineered modification known as the Wet-Hulled Vanilla process. By introducing organic vanilla elements during the critical, high-moisture hulling stage, farmers bind sweet aromatics directly into the cellular structure of the soft coffee seed.
  1. Precision Depulping: The hand-picked, deeply ripe cherries are depulped immediately, leaving a thick, sugar-dense layer of sticky mucilage on the parchment skin.
  2. The Wet-Hulled Infusion Stage: Unlike standard worldwide processes where coffee dries fully in its protective shell, the parchment here is mechanically peeled off while the bean is still soft, holding a high 20% to 25% moisture content. During this exact hulling phase, the green beans are processed alongside rich, aromatic vanilla.
  3. Deep Porous Absorption: Because the un-dried green beans are soft and highly porous at this moisture stage, they act like a sponge. The essential oils and aromatic compounds of the vanilla are drawn deep into the core of the seed.
  4. Impeccable Patio Drying: The bare green beans are immediately spread onto pristine, clean drying patios. They are continuously turned under the sun until they hit a stable 11-12% moisture level, permanently locking the pastry-like aromatic profile inside the bean structure.
