☀️ The ‘Natural’ Process Explained

The defining characteristic of this lot is its meticulous Natural Process (also historically known as the dry process).
Why is it named “Natural”?
It is called “Natural” because it is the most primitive, unaltered way to process coffee. Instead of using mechanical pulpers and water to strip the fruit away immediately after harvest, the coffee seeds are left to dry exactly as nature created them.
  1. Selection: Farmers hand-pick only optimum, blood-red, sugar-saturated cherries.
  2. Sun-Drying: The whole, intact cherries are spread across raised African drying beds under open sunlight.
  3. Meticulous Care: For 3 to 4 weeks, the cherries are continuously turned by hand multiple times a day to ensure completely even drying and prevent spoiling.
Only when the outer fruit husk becomes completely brittle, dark, and hard is it gently milled away to reveal the green coffee bean inside.

🍵Why does the coffee taste so special?

During the weeks the cherry spends drying on the raised beds, a beautiful organic reaction takes place. The bean acts like a sponge, drawing in the sweet mucilage and intensely concentrated fruit sugars from the surrounding pulp.
  • Tropical Fruit Burst: Unlike standard earthy Sumatran coffees, the Natural process injects vibrant tasting notes of ripe strawberry, sweet plum, red grape, and jackfruit.
  • Decadent Sweetness & Body: The cup boasts a heavy, syrupy mouthfeel with clear undertones of dark chocolate, brown sugar, and molasses.
  • Complex Finish: A winey, lingering acidity that balances the heavy body, providing a sophisticated, clean aftertaste.
