🍓 The ‘Wet-Hulled Strawberry’ Co-Fermentation Process

The defining signature of this lot is its experimental Wet-Hulled Strawberry Co-Fermentation process, an intentional evolution of Sumatra’s historical Giling Basah (wet-hulling) technique.
The name perfectly mirrors the raw processing mechanics and the stunning sensory outcome:
  1. The “Strawberry Juice” Co-Fermentation: Hand-picked, deep-red Catimor cherries are immediately pulped to remove their outer skin. The beans are then placed into sealed oxygen-deprived fermentation tanks for up to 48 hours. During this window, actual fresh strawberry fruit and juices are introduced into the tanks. As native yeasts consume the mucilage sugars, they draw the intense fruity esters of the strawberries straight into the porous core of the coffee seed.
  2. The “Wet-Hulled” Stage: Following the fruit infusion, the beans are washed and laid out to dry briefly until the moisture level drops to 20-24%. While the seeds are still soft and moist, their outer protective parchment shells are stripped away using a specialized huller—giving the coffee the full body characteristic of Sumatran coffees.
  3. The Final Sun-Drying: The exposed green coffee beans undergo a final, meticulous sun-drying cycle until they reach an optimal moisture level of 11%–12%

By forcing real fruit compounds into the green beans under anaerobic pressure, this coffee bypasses traditional flavor boundaries to produce a completely natural, hyper-fruity profile:
  • Explosive Berry Sweetness: The cup opens with dominant, unmistakable notes of strawberry candy, fresh cherry, and wild blueberry.
  • Luscious Jammy Acidity: A vibrant, juicy lift reminiscent of strawberry yogurt and bright lime.
  • Velvety, Complex Finish: A deep, syrupy structure balanced perfectly by notes of milk chocolate, brown sugar, and warm brown spices.

☕ Roasting & Brewing Guidance

Because of its highly volatile, fruit-forward aromatic compounds, this coffee is roasted strictly as a Filter Roast.
To extract the complex berry layers and clear sweetness, manual pour-over drippers are highly recommended:
  • Brew Method: V60, Fellow Stagg X, or Origami.
  • Recipe: 15g of medium-ground coffee to 225ml of water (1:15 ratio).
  • Water Temperature: Keep your water at 91°C–94°C. A slow, steady concentric pour will let the refreshing strawberry character shine alongside a balanced, clean acidity.
