🧪 The ‘Wet-Hulled Lychee’ Co-Fermentation Process

The true magic of this lot lies in its experimental Wet-Hulled Lychee Co-Fermentation process. It is a deliberate, highly technical modification of Sumatra’s iconic Giling Basah (wet-hulling) technique.
The name honors the high-altitude volcanic origin combined with the intense, organic flavor integration applied during harvest:
  1. The Fruit Co-Fermentation: Freshly picked, deep-red Arabica cherries are pulped to strip away their outer skins. The sticky beans, still coated in natural fruit mucilage, are placed inside air-tight, oxygen-starved anaerobic fermentation tanks. During this stage, actual fresh lychee fruits and pure juices are introduced into the tanks. As native yeasts digest the coffee sugars under pressure, the porous green seeds absorb the bright, sweet, volatile aromatic esters of the fresh lychee.
  2. The Signature Wet-Hulling: The beans are washed and spread under the sun for a brief window until their moisture drops to roughly 20%–24%. While the coffee bean is still soft and pliable, its outer parchment shell is mechanically stripped away (Giling Basah). This traditional step locks in the big, syrupy Sumatran body.
  3. The Final Cure: The exposed jade-green beans are laid back out on raised drying beds until they reach a strict, stable export moisture level of 11%–12%.
 

🍵 Why does the coffee taste so special?

By forcing real fruit matrixes into the green coffee under an oxygen-free vacuum, the traditional earthy and herbal tones are transformed into a clean canvas of pure tropical sweetness. It tastes completely natural, yet uniquely exotic:
  • Explosive Tropical Fruits: A massive front-palette wave of fresh lychee, sweet stone fruit, and bright orange citrus.
  • Delicate Floral Aromatics: An elegant, perfume-like nose carrying hints of jasmine, rose petals, and orange blossom.
  • Sweet, Textured Finish: A velvety medium body rounded out by notes of brown sugar, high-grade black tea, and warming brown spices.
 

☕ Roasting & Extraction Parameters

To protect the delicate floral notes and volatile lychee aromatics, Karo Lychee is roasted exclusively as a Filter Roast. It is highly discouraged for dark espresso extractions where high heat can flash off its fruit structure.
To extract the clean, vinous juice properties of this lot, manual pour-over preparation is recommended:
  • Brew Method: V60, Origami Dripper, or Chemex.
  • Recipe: 15g of medium-coarse coffee to 225ml of water (1:15 ratio).
  • Water Temperature: Keep your water around 91°C–94°C. Use a steady, slow concentric pour to let the refreshing lychee sweetness bloom alongside a bright, crisp acidity.
