The crisp microclimate slows bean maturation, prompting the seeds to pack immense organic sugars perfectly tailored for advanced processing manipulation.

🫐 The ‘Wet-Hulled Blueberry’ Co-Fermentation Process

The defining signature of this lot is its experimental Wet-Hulled Blueberry Co-Fermentation process, which deliberately transforms Sumatra’s iconic Giling Basah (wet-hulling) technique into a fruit-forward vehicle.
The name honors its volcanic geographic origin paired with the actual botanical infusion embedded into the green coffee during post-harvest fermentation:
  1. Hyper-Selective Sorting: Hand-picked, blood-red Catimor cherries are floating-sorted to clear any physical defects.
  2. The Blueberry Co-Fermentation: The sorted cherries are mechanical-pulped to peel away the skins. The green coffee beans, still completely wrapped in their sticky, sweet fruit mucilage, are locked inside oxygen-deprived fermentation tanks. During this window, actual fresh blueberry fruit and juices are introduced into the tanks. As native wild yeasts break down the sugars, the porous structure of the coffee seeds acts like a natural sponge, absorbing the sweet, volatile aromatic esters of the fresh berries.
  3. The Signature Wet-Hulling: The beans are washed clean and laid on raised drying beds under the sun until the moisture level drops briefly to roughly 20-24%. While the seeds are still soft and pliable, they undergo immediate mechanical wet-hulling to strip away their outer protective parchment shells. This traditional step preserves the big, syrupy Sumatran body before a final gentle drying down to a stable export moisture target of 11%–12%.
 

🍵Why does the coffee taste so special?

By utilizing anaerobic pressure to fuse real fruit sugars directly into the seed core, traditional earthy notes give way to a pristine, natural canvas of pure candy sweetness. It yields a stunning flavor spectrum completely unique to North Sumatra:
  • Explosive Berry Sweetness: The cup opens with a dominant front-palette wave of fresh blueberry, sweet blackcurrant, and juicy purple grape.
  • Playful Candy Nuances: Layered, bright structural undertones of sweet bubblegum and vanilla blueberry smoothies.
  • Sophisticated, Warm Finish: A rich, velvety body elegantly rounded out by hints of milk chocolate, brown sugar, and warm baking spices.
 

☕ Roasting & Extraction Parameters

To protect the fragile, volatile fruit aromatics and the delicate milk-chocolate sweetness, Karo Blueberry is roasted strictly as a Filter Roast.
To extract the clean, juicy attributes of this lot, manual pour-over preparation is highly recommended:
  • Brew Method: V60, Origami Dripper, or Kalita Wave.
  • Recipe: 15g of medium-ground coffee to 225ml of water (1:15 ratio).
  • Water Temperature: Keep your water around 91°C–94°C. A slow, steady concentric pour will let the refreshing berry fragrance bloom beautifully without over-extracting bitter notes. It also makes an exceptional, highly refreshing cold brew base!
