Tucked deep within the remote central highlands of Papua, the Baliem Valley surrounds the isolated town of Wamena. There are no massive, industrialized commercial operations here; the coffee is harvested from semi-wild “garden plots” tended by local tribes using organic, ancestral farming practices with zero chemical inputs. The freezing mountain winds combined with thin alpine air delay cherry maturation, forcing the coffee seeds to pack intense sugar densities.

💧 The Meticulous ‘Fully Washed’ Process

To safeguard the delicate floral qualities and pure lineage of the heritage Typica strain, this coffee undergoes a strict Fully Washed (Dry Hull) processing framework.
The Processing Steps:
  1. Hyper-Selective Harvesting: Smallholders selectively hand-pick only optimal, dark-crimson, sugar-saturated cherries.
  2. Immediate Mechanical Pulping: Within hours of harvesting, the cherries are pulped to mechanically separate the outer skin, leaving the inner seeds encased in a sugary, slippery mucilage layer.
  3. Clean Water Fermentation: The beans undergo a wet fermentation stage submerged in crisp mountain spring water for 12 to 24 hours. During this window, naturally occurring microflora dissolve the remaining sticky sugars, embedding a bright organic acid framework into the heart of the seed.
  4. Washing Channel Grading: The fermented coffee is aggressively flushed through fresh water channels where lightweight, low-density defect beans are automatically floated off, isolating only the densest, premium-quality seeds.
  5. Raised Bed Sun Drying: The sparkling clean parchment coffee is laid out on raised African drying beds under pristine mountain sunlight. Workers continuously rake and rotate the lot to guarantee perfect, even drying until the beans stabilize at a crisp, safe export moisture target of 11%–12%.

  • Delicate Floral & Herbal Nose: Because the trees develop under high-altitude shades, they build volatile aromatic compounds that bloom with a perfumed jasmine, soft forest flower, and clean herbal aroma.
  • Comforting Chocolate Sweetness: The cup features an exceptionally soft, approachable mouthfeel backed by dominant tasting notes of velvety dark chocolate, smooth caramel, and sweet orange, dissolving into a clean finish with minimal bitterness.
 

☕ Roasting & Extraction Parameters

This rare single-origin lot is masterfully roasted to a Medium Roast to keep its elegant floral fragrance and rich cocoa body in complete equilibrium.
To experience the clean, multi-layered complexity of this high-elevation cup, manual filter extraction is highly recommended:
    • Brew Method: V60, Fellow Stagg X, Origami Dripper, or Kalita Wave.
    • Recipe: 15g of medium-ground coffee to 225ml of water (1:15 ratio).
    • Water Temperature: Keep your water around 90°C–93°C. Pour steadily in concentric circles to let the sweet molasses, caramel, and floral undertones blossom beautifully.
