🌱 Volcanic Subak Abian Terroir & Unique Variants

True Kintamani coffee thrives under a highly protected, traditional agricultural system known as Subak Abian. Guided by a philosophy of deep environmental respect and ecological harmony, local farmers grow their coffee organically without harsh synthetic chemicals.
Perched on the fertile edges of the active Mount Batur caldera up to 1,600 MASL, our delicate Bourbon and S795 variants grow side-by-side with massive citrus plantations. The coffee trees share the same volcanic soil, water channels, and shade canopy with orange, tangerine, and cacao trees. This natural companion planting allows the coffee root systems to physically absorb the essential citrus oils from the earth, infusing the crop with its iconic flavor profile long before it is harvested.

💧 The Precision of the Fully-Washed Process

To preserve the crisp brightness of the terroir and ensure the cleanest finish possible, Bali Kintamani coffee skips the traditional Indonesian wet-hulling (Giling Basah) method in favor of a strict, gentle Fully-Washed (Wet Method) process:

  1. Flotation & Pulping: Farmers meticulously handpick optimal red cherries and place them in water channels. Floating, under-ripe fruit is skimmed off, and the remaining dense cherries go immediately through mechanical pulpers to remove the outer skins.
  2. Controlled Wet Fermentation: The sticky, mucilage-coated seeds soak in pristine water tanks for 24 to 36 hours. During this stage, micro-organisms naturally dissolve the remaining fruit sugars, creating organic acids that enhance the bean’s clean fruitiness.
  3. The Pure Wash: The beans are swept through fresh mountain channels, washing away all residual fruit layers until the outer parchment shell is perfectly smooth and white.
  4. Slow Curing in Parchment: Unlike other Indonesian beans that are stripped bare while wet, Kintamani coffee is dried slowly inside its hard protective parchment shell on raised sun beds. This protective barrier allows the seed to stabilize evenly over 10 to 14 days until it hits a perfect 11-12% moisture level. Only then is the dry parchment hulled away, revealing a beautiful, uniform green bean.

Because this coffee is grown alongside orange trees and processed using a clean fully-washed method, it completely lacks the heavy, woodsy, or rustic tones typical of Sumatran varieties. Instead, it sparkles with a bright, crisp, and fruity clarity.

  • The Crisp Finish: The wet-processing leaves a highly transparent, tea-like clarity on the tongue, concluding with a sweet, crisp, and refreshing citrus aftertaste that lingers beautifully.
 

☕ Master Brewing Suggestion: The V60 Pour-Over

To celebrate the brilliant citric acidity and delicate floral notes of Bali Kintamani Arabica, a paper-filtered drip method like the manual Hario V60 is highly recommended. The paper filter traps heavy coffee sediment and oils, showcasing the bean’s bright citrus clarity perfectly.

The Recipe for Perfection:

  • Ratio: 1:15 (e.g., 15 grams of coffee to 225 ml of water)
  • Grind Size: Medium-Fine (resembling fine table salt)
  • Water Temperature: 91°C – 93°C (Slightly cooler water prevents over-extracting bitter notes, highlighting the fruit)
  • Total Brew Time: 2.5 to 3 minutes

Step-by-Step Guide:

  1. The Rinse: Place your paper filter in the V60 cone and rinse it with hot water to wash away any paper taste, then discard the rinse water.
  2. The Bloom: Add your freshly ground coffee. Gently pour 45 ml of hot water over the bed. Stir slightly and let it bloom for 45 seconds to release carbon dioxide gases.
  3. The Golden Pours: Slowly pour the remaining 180 ml of water in steady, concentric circles, avoiding the very edge of the paper filter. Keep your pour slow and continuous.
  4. The Serve: Let the water draw down completely, give the server a gentle swirl, and enjoy an incredibly vibrant, refreshing taste of Balinese paradise.
