🌱 Volcanic Terraces and Natural Mocha Characteristics

Our single-origin coffee thrives along the fertile volcanic slopes of Temanggung and Mount Kelir in Central Java. Unlike standard commercial robustas grown on low, sweltering plains, these beans are cultivated in highland cooling zones reaching up to 1,000 MASL.
This elevated microclimate slows down the maturation of the coffee cherries. Growing in deep, mineral-rich volcanic soil alongside local cacao and fruit trees allows the roots to absorb complex chemical compounds. This slow growth transforms the beans’ structural cellular makeup, resulting in an exceptionally dense seed that boasts a naturally low acidity profile and a deep, innate cocoa aroma.

To pull forward the deepest sweet notes and locking in its signature aromatics, this specialty micro-lot undergoes a meticulous, traditional Natural Process:

  1. Selective Harvesting: Farmers hand-harvest only perfectly uniform, sugar-saturated deep red cherries.
  2. Whole Fruit Dehydration: The cherries skip the washing and peeling stages entirely. Instead, they are laid out whole across sun-drenched bamboo mats or raised patio drying beds.
  3. Sugar Absorption: Over 14 to 21 days, the ambient tropical heat slowly dehydrates the fruit. As the outer cherry skin and sweet mucilage shrink and dry around the seed, the inner coffee bean drinks in the concentrated fruit sugars, adding structural sweetness and body.
  4. Hulling: Once the fruit pods turn completely dark and reach a perfectly stable 11-12% moisture level, the hardened shell is hulled away to reveal a clean, dark jade-colored bean.

Because the bean undergoes full sun-dehydration directly inside its sweet cherry wrapper, the traditional bitterness of the Robusta species softens into a highly complex profile.
  • The Scent Experience: The absolute signature of this coffee is its prominent aroma. As hot water hits the grounds, it releases a bold, distinctive smell of roasted mocha and dark cacao.
  • The Flavor Profile: Every sip coats the tongue in a heavy, syrupy full body. The cup is beautifully balanced by rich notes of bittersweet dark chocolate, toasted walnuts, and a deep brown sugar sweetness.
  • Low Acidity: With almost zero citric acidity, it offers an incredibly smooth, bold, and punchy cup with a satisfying, clean finish that lingers comfortably.
 

☕ Master Brewing Suggestion: French Press or Traditional Tubruk

To experience the true density, natural oils, and sweet chocolate aroma of a natural Java Mocha Robusta, filter-free or full-immersion methods are highly recommended.

Option A: Kopi Tubruk (The Authentic Indonesian Steeping Method)

This traditional method allows the natural oils to bypass paper traps, amplifying the rich mouthfeel.
    • Grind Size: Medium-Fine
    • Ratio: 1:12 (e.g., 12 grams of coffee to 150 ml of water)
    • Water Temperature: 94°C – 96°C (Hot, off-boil water)
    • Method: Place grounds directly into your cup. Pour hot water over them, stir thoroughly, and let it steep for 4 minutes. Allow the sediment to fully sink to the bottom before enjoying its comforting, unadulterated chocolate depth.

Option B: The Classic French Press

  • Grind Size: Coarse (resembling coarse sea salt)
  • Ratio: 1:15 (e.g., 20 grams of coffee to 300 ml of water)
  • Method: Add coffee to the carafe, fill with hot water, and stir gently. Place the lid on and let it immerse for 4 minutes. Press the plunger down with steady, slow pressure and pour immediately. It creates a robust cup with an exceptionally thick, velvet-like texture.
