  1. The Airtight Lock: Farmers hand-pick uniform, sugar-saturated deep red cherries and place them whole into specialized hermetically sealed bags or stainless steel tanks.
  2. 120-150 Hour Anaerobic Fermentation: With all oxygen strictly pumped out, the environment shifts to an anoxic state. Microbes and anaerobic yeasts digest the fruit sugars over 120 to 150 hours, producing highly unique organic acids while maintaining stable internal pressures and temperatures.
  3. Slow Whole-Fruit Curing: The fully fermented cherries are removed from the sealed environment and immediately spread across raised beds with their skins and fruit meat entirely intact. The lot sun-dries slowly over 3 to 4 weeks under highland breezes, forcing the complex, wine-like fruit properties deep into the center of the seed.

Step-by-Step Guide:

    1. The Bloom: Place your grounds in the V60 filter. Pour 45 ml of hot water evenly across the bed. Let it bloom undisturbed for 45 seconds to allow the rich anaerobic gases to fully vent.
    2. The Sweet Infusion: At the 0:45 mark, slowly pour in steady concentric circles up to 140 ml, focusing on a calm, gentle water stream.
