Thriving at alpine cooling altitudes up to 1,650 MASL, the coffee trees endure sharp nocturnal temperature drops and a distinct dry season. This dramatic climate slows cherry ripening, forcing the seed to build dense organic sucrose compounds.
The estate lots intentionally isolate historic cultivars, featuring USDA 762 and S795 (Jember)—a legendary vintage Arabica line nurtured by the Indonesian Coffee and Cocoa Research Institute. Growing organically in sulfur-enriched volcanic soil alongside wild ferns, pine forests, and local vanilla plants, the beans develop an intricate chemical skeleton that translates into exceptional sweetness in the brewed cup.

    1. Flotation Sorting: Handpicked red cherries are submerged in large water channels. Floating, low-density fruit is discarded, ensuring only optimal, sugar-saturated cherries move forward.
    2. Mechanical Pulping & Fermentation: The outer skins are cleanly stripped away by mechanical pulpers. The mucilage-coated seeds are then routed to clean water tanks to ferment for 24 hours, cleanly dissolving the fruit sugars.
    3. The Pristine Wash: The beans are rushed through clean mountain water channels, scrubbing away all remaining sticky mucilage until the hard outer parchment shell is perfectly smooth and pearly white.
    4. Curing in Parchment: Unlike traditional Indonesian methods that expose naked beans to ambient moisture early, Ijen Arabica is dried slowly inside its protective parchment shell on raised sun beds. Dried patiently for 10 to 14 days until hitting a stable 11% moisture level, the bean retains its delicate cellular defenses before final dry hulling.

    • Water Temperature: 92°C – 94°C
    • Total Extraction Time: 2:30 to 3:00 minutes

Step-by-Step Guide:

    1. The Bloom: Set your grounds into the pre-rinsed V60 filter. Pour 45 ml of water evenly across the bed and let it bloom undisturbed for 45 seconds to allow trapped carbon gases to fully vent.
    2. The First Pour: At the 0:45 mark, slowly pour in steady concentric circles up to 135 ml by focusing on a gentle, calm water stream.
    3. The Final Drawdown: At 1:30, complete your final smooth pour up to the target 225 ml mark. Let the water draw down completely, give your glass server a gentle swirl, and enjoy the stunning clarity of East Java’s volcanic heritage.
