True Mount Puntang Robusta thrives within an exceptional high-altitude microclimate that is highly unusual for the species. While standard commercial robustas are relegated to sweltering lowland plains, our premium lots are cultivated in alpine cooling zones scaling up to 1,450 MASL.
This extreme mountain elevation brings sharp temperature drops at night, dramatically slowing down the maturation of the coffee cherries. Growing slowly in deep, volcanic-rich soil alongside native forest shade trees allows the roots to absorb complex organic compounds. This structural cellular shift minimizes heavy chlorogenic bitterness while concentrating natural organic sugars inside the dense seed.

To preserve the absolute transparent clarity of the mountain terroir and ensure the cleanest possible finish, this fine single-origin undergoes a strict Fully-Washed (Wet Method) processing format:

    1. Flotation Sorting: Handpicked red cherries are submerged in large water channels. Floating, low-density fruit is discarded, ensuring only optimal, sugar-saturated cherries move forward.
    2. Mechanical Pulping & Fermentation: The outer skins are cleanly stripped away by mechanical pulpers. The mucilage-coated seeds are then routed to clean water tanks to ferment for 24 hours, cleanly dissolving the fruit sugars.
    3. The Pristine Wash: The beans are rushed through clean mountain water channels, scrubbing away all remaining sticky mucilage until the hard outer parchment shell is perfectly smooth and pearly white.
    4. Curing in Parchment: Unlike traditional Indonesian methods that expose naked beans to ambient moisture early, our Robusta is dried slowly inside its protective parchment shell on raised sun beds. Dried patiently for 10 to 14 days until hitting a stable 11% moisture level, the bean retains its delicate cellular defenses before final dry hulling.
