🌱 The Caldera Terroir & Highland Canopy

True Bayan coffee thrives in a unique microclimate on the volcanic slopes of Mount Rinjani. While standard commercial robusta is grown on sweltering lowland plains, our premium crops are cultivated at higher elevations up to 900 MASL. This high altitude brings cool alpine nights that slow cherry ripening, forcing the trees to develop complex organic carbohydrates.
Growing under an organic agroforestry canopy alongside endemic cocoa, wild vanilla, durian, and banana trees, the plants draw complex sweetness directly from the earth. By enforcing strict harvest protocols, local farmers pick only the most uniform seeds, stripping away the harsh, flat profiles associated with low-altitude varieties.

☀️ The Masterful Natural Process (Dry Method)

To capture and lock in the maximum structural sweetness of the fruit, the crop undergoes a patient, zero-water Natural Process:
[The Natural Processing Sequence]
100% Red Cherry Harvest ➔ Density Float Selection ➔ Whole Fruit Sun-Drying on Raised Beds (3 Weeks) ➔ Direct Sugar Mucilage Absorption ➔ Dry Hulling at 12% Moisture
  1. Selective Harvesting: Local farmers handpick only uniform, sugar-saturated deep red cherries at their peak sugar concentration.
  2. Whole Fruit Dehydration: The cherries skip the washing and peeling stages entirely. Instead, they are laid out whole across open-air raised sun beds exposed to mountain breezes.
  3. Sugar Infusion: Over 14 to 21 days, the ambient sun slowly dries out the fruit. As the outer cherry skin and sweet mucilage shrink tightly around the seed, the inner bean naturally reabsorbs the fruit sugars, minimizing bitterness while maximizing structural sweetness.
  4. Precision Hulling: Once the fruit pods turn completely brittle and dark, the crop hits a perfectly stable 12% moisture level. The dry hulls are cracked away, revealing a clean, hard, jade-colored green bean.

✨ Why the Taste is Exceptionally Special

Because the bean undergoes its long drying phase nestled tightly inside its sweet fruit wrapper, the traditional harsh or rubbery bitterness common in commercial alternatives is completely stripped away.
  • The Cupping Notes: It treats the palate to an exceptionally heavy, buttery, and full-bodied texture with a clean, low-toned acidity. The front profile greets you with dominant notes of lemon, berries, caramel, decadent dark chocolate, and roasted nuts.
  • The Unique Fruity Finish: As the cup opens up, a highly distinctive aroma and flavor of ripe jackfruit and sun-kissed orange blossoms emerge seamlessly. It concludes with an incredibly smooth, caramelized finish that lingers comfortably without any harsh aftertaste.

☕ Master Brewing Suggestion: Traditional Tubruk or Moka Pot

To extract the thick texture, natural oils, and deep chocolate-fruit sweetness of natural Bayan Robusta, immersion-style or stove-pressurized extraction is highly recommended.

Option A: Kopi Tubruk (Traditional Indonesian Steeping) — For True Authenticity

This historic method allows the natural oils to bypass paper traps entirely, intensifying the bold mouthfeel and rich palm sugar sweetness.
  • Grind Size: Fine to Medium-Fine
  • Water Temperature: 94°C – 96°C (Hot, off-boil water)
  • Ratio: 1:12 (e.g., 15 grams of coffee to 180 ml of water)
  • Method: Put the coffee grounds directly into your favorite glass. Pour the hot water over them, stir thoroughly, and let it steep for 4 minutes. Allow the fine sediment to settle completely to the bottom before taking your first velvety, aromatic sip.

Option B: Stovetop Moka Pot — For an Intense Espresso-Like Profile

  • Grind Size: Fine
  • Method: Fill the internal filter basket evenly without overly pressing the grounds. Brew over low, steady heat. This extraction pulls out a dense, syrupy hazelnut crema, making it the ultimate base for a rich, traditional Kopi Susu (iced milk coffee blend).
